Ingredients: 
SALAD 
*Leafy salad x 1 packet 
*Beetroot [cooked] x 2 diced  
*Lentils x 1 cup  
*Pear x 1 sliced 
*Shredded Carrot [handful]  
*Goat Cheese 
*Walnut halves (crushed) for just being extra [optional]
DO NOT ADD IF YOU ARE ALLERGIC TO NUTS 

DRESSING 
*Half lemon squeezed 
*Honey x 1 tea spoon 
*Salt and Pepper 
MIX THE INGREDIENTS AND PUT ASIDE

LENTILS
*Cook the lentils in your favourite stock. 
You can add extra seasoning if you like. 
Make sure its well cooked and does not become mashy by 
ensuring there is just enough [not too much] water. 
This should take about 20 mins.

TIME'S UP
On a bed of leafy salad, add the carrots, sliced pear, 
lentils, beetroot, sprinkle the goat cheese and walnuts.

***Add the dressing to individual servings. 
If you add the dressing to all the salad, 
it will make any left over leafy salad soggy. 
No one likes none of that.

I also added chicken, I made this meal for 
someone who just cannot do without meat in 
their salad. So this is entirely optional.
