Egg Salad Open Sandwich

This brunch recipe was inspired by ‘what’s in my fridge’ kind of days. Its simple to make and very delicious.

Egg Salad Open Sandwich. Serves 2 people


INGREDIENTS

  1. 3 eggs

  2. 50ml double cream

  3. 1 onion- diced.

  4. 250g mozzarella cheese – shredded in small pieces.

  5. 2 medium size tomatoes – diced in medium size.

  6. 1 avocado – diced.

  7. Fresh basil (handful) –chopped.

  8. 2 slices of bread – toasted.

  9. Strawberry jam- enough for spreading.

  10. Olive oil.

COOKING METHOD

The Egg

  1. In a bowl, mix the 3 eggs with the double cream and diced onions.

  2. In a medium hot pan, add some olive oil (about 5ml) and add the egg mix. Fry and turn as a wrap till cooked.

The Salad

  1. In a bowl, mix together the diced tomato, avocado, mozzarella and basil.

The Sandwich

  1. On the toasted bread, spread the strawberry jam.

  2. Lay half of the fried egg.

  3. Top with the salad.
